Kedgeree simplified

This is my take on Kedgeree, which is a fish, spices, rice and eggs all in one dish from colonial India which is popular here. My take on this dish simply means to remove all the time consuming steps and use only the main ingredients! I used smoked mackerel instead of haddock as that's what I had. Instead of poaching the fish in bay infused milk, I pan fried the fish before flaking. Then in the style of the typical Asian fried rice, I fried the dish up then topped with sliced boiled egg...oh, and I added spinach to top up the vege/fibre content of the dish. It kinds of remains me of a Malay dish but can't think which!

Nasi Lemak Ikan

This is my favourite version of nasi lemak, not the popular one with ikan bilis but the one with a teeny tiny whole fish! It is now very rare to find and so on my trip home, I was real happy to find that my local market still sells this version...yumm yumm!

Nasi Goreng Kampung

The other day, I suddenly had a craving for Nasi Goreng Kampung, so I searched the web for a recipe. Since it was an impromptu decision to cook this dish, I had to raid my store cupboard and fridge, hoping that I will have all the required ingredients. Except for the right type of vegetable, i.e. chai sim, I had some kangkung so it will have to do. I also popped in some left over beef but as long as the main ingredients of ikan bilis and cili padi was present I was happy enough with the result!

You will notice that my nasi goreng kampung is darker then normal, I do like my soya sauce a tad too much!

Char Siew Fun (Rice)

I had some left over pork fillet and decided to make some char siew and ended up with char siew rice for dinner! I used the rice recipe for chicken rice as well as the chilli sauce. And finally to round it all up, a simple cabbage soup.

Nasi Tomato (Tomato Rice)

Nasi Tomato or Tomato Rice is a rich tomato (no surprises there) flavoured rice. It makes a very satisfying meal when served with a curry or rendang. Although the recipe called for tomato soup, err, it was a cheat's recipe that I was using, I didn't have any so I double cheated and used watered down tomato puree with a dash of tomato ketchup! But it turn out really nice so moh man tai!


I served mine with Beef Rendang and Cucumber Acar

Chicken Briyani

This is a malay style all in one rice dish, usually accompanied with lightly pickled vegetables. The last time I made this was with lamb, this time I used chicked which turned out just as good. The beauty of this dish is that the meat is buried in the almost cooked rice and baked in the oven to finish. Yumms but be careful not to eat too often else the spare tyres will grow!!

Paella

Recently the international market came to town and I finally had the chance to try authentic Paella, the non seafood version that is. It was really nice and since we also bought some chorizo from the market, I could try to recreate the dish at home, below is the result using Delia Smith's recipe without the seafood.
