Chicken Tagine with Olives and Preserved Lemon
This is from Jamie Oliver's latest book, Jamie Does. Flavoured with preserved lemon and olives and then stewed till the meat falls off the bone, a very hearty meal served with lightly seasoned couscous.
Penang is well known for its food, not only for the variety but the taste so says the person who comes from there, me! I'm now living in Scotland and therefore have no easy access to the kopitiams, mamak stalls, hawker centres and what have yous that I take for granted at home. So when I have a craving for something from home, there's no choice but to cook it myself. In my kitchen, I try to recreate some of the delicous food from home. So like me, if you have a craving for something, go on give it a go... you never know unless you try...
